Manic: January is crazy busy for all it seems and you want to make a quick homemade dinner for the family in record time. Healthy salmon sounds good but you don’t have the time or ingredients on hand to make it right.
Managed: I remembered that I had the easiest salmon recipe that only requires the salmon and two ingredients that you probably already have on hand! I made this recipe last week, that I had almost forgot about, and it was so tasty!
This recipe comes from a friend. Years ago, I picked my son up from his buddy’s house and I was shocked to hear my then 11-year-old tell me how much he loved the salmon they served him for dinner. Did I hear my boy right who wouldn’t dare try salmon for me because it was fish?!
So, I had to know the secret recipe that made my kid a salmon lover. The next weekend when I drove my son back to his friend’s house for another play date, I asked the family for the recipe. I couldn’t believe how easy it is to prepare.
Just three ingredients and presto, you have savory salmon. Here it is for your family to try:
Simple Savory Salmon Recipe
You will need:
2 or 3 salmon steaks – I like to buy it wild
1/2 cup maple syrup
1/2 cup soy sauce
1. Combine the maple syrup and soy sauce. Marinate your salmon for as short as a few hours or overnight. That is up to you. I didn’t even marinate it last week when I made it and the recipe was still delish!
2. Prepare the marinated salmon the way you like it. My friend likes to cook it on the grill. I like to sear it on the stove for four minutes on medium high in my cast iron skillet. Then I cook it in a 400-degree oven for about five minutes or so.
3. While your salmon is cooking, boil the left-over marinade so it will become a sauce that you can pour over your finished salmon if you desire. More on how to safely boil a marinade can be found here in this foodsafety.gov article.
4. For a healthier meal, serve the salmon over brown rice or top over a salad.
